Wedding gifts are a mystery to me. It is one of the few gift-giving occasions where someone says, “HEY! Click this exact link and buy me this exact thing in this exact size and color.” It couldn’t be any more convenient. Yet, I, as many do, received a lot of non-registry gifts for my wedding. The list includes, but is not limited to, a chicken shaped serving dish, a regifted set of knives (seriously the card to the previous owner was still in the box), and thousands of multicolor dish towels with the corresponding message of, “you can never own too many dish towels!” Turns out you absolutely can own too many dish towels. One of those sweet and thoughtful, but slightly unwelcomed gifts happened to come from my husband’s best man. I still remember sitting on the floor of our empty apartment opening a gigantic box to see a 6 qt pressure cooker. It looked like a space machine and my first thought was, ‘well there goes 12 inches of counter space we don’t have.’ For the first 6 months of marriage, I refused to learn how to use this alien device as it accumulated dust in the bottom of the pantry with the chicken dish and cheap knives. Then, as any true spiritual awakening begins, I saw a post on Facebook that someone cooked brown rice in their pressure cooker in a mere 15 minutes. I knew this thing was witchcraft. But, I gave it a try and I am here to say I’ve seen the light. I now use my precious pressure cooker every single day. It makes all my favorite foods, only faster. So, go pretend it is your birthday and buy yourself a pressure cooker! This recipe took me approximately 5 minutes to prepare post long run and the timer was going off before I was out of the shower.

Instant Pot Teriyaki Chicken and Pineapple Lettuce Wraps

Yield: 4 servings Ingredients
  • 4 Chicken Breasts
  • ½ cup carrot matchsticks
  • ½ cup pineapple, diced
  • ½ cup teriyaki sauce
  • ¼ cup water
  • 8 large lettuce or cabbage leaves
  • Green onions (optional)
Instructions
  1. Add chicken breasts, pineapple, teriyaki sauce, and water into the instant pot/ pressure cooker. Set to cook for 10 minutes and release naturally.
  2. To assemble the wraps, divide one chicken breast, sliced or shredded, into 2 lettuce wraps. Add an ⅛ cup of carrots, pineapple, and garnish with green onions. Add additional teriyaki sauce if desired.
