Quick Chicken Chili
Can we all just collectively agree that swimming in the winter time is rough. First, you have to develop the fortitude to actually enter the pool. I love to observe how other people prolong jumping into the inevitably chilly water. “Stretching” “Adjusting goggle straps” “Re-situating their equipment bag” Ok, I admit when I say, other people,​ ​ I actually mean myself. You can 100% catch me doing all of these actions before every swim. Then, by the time you are in, your heart rate is up and body temperature is above freezing, it’s time to get out. When I ultimately make it to my car the tips of my hair are frozen. I’m literally a human icicle. What does every human icicle need? (That sounds like the set up to a markedly terrible joke.) Well, they need soup, of course! I want to share my recipe for a simple, slightly spicy, soul-warming soup ready for those frigid winter pool hours. This recipe is less than 10 ingredients, and truthfully can even be reduced if you don’t have the extra veggies on hand. The whole soup comes together in less than 30 minutes! The same amount of time it took my hair to defrost.

Quick Chicken Chili

Yield: 4 servings Ingredients
  • 1 medium yellow onion, diced
  • 1 green bell pepper, diced
  • 4 cups chicken broth
  • 4 cups cooked chicken breast, shredded*
  • 1 can corn, drained
  • 2 cans great northern beans, drained and rinsed
  • 1 ½ cups salsa verde
  • 1 Tbsp cumin
  • 1 cup spinach or kale, chopped
*4 cups shredded chicken is roughly equivalent to 2 chicken breasts. I use rotisserie chicken for convenience. Instructions
  1. Heat a tablespoon of olive oil in a soup pot over medium heat. Add onion and bell pepper and cook for 4-5 minutes until vegetables are soft and onions translucent.
  2. Add broth, chicken, corn, beans, salsa verde, and cumin into the pot. Stir to combine.
  3. Let soup slightly simmer for 10 minutes before adding chopped spinach or kale. Stir until spinach/kale is wilted, about 2 minutes.
  4. Remove from heat and serve!
