Chicken Gyro
The Mediterranean diet has continually joined the ranks as a top diet for healthy Americans. While I don’t strictly follow a particular diet (or advise others to do so) there are several aspects of the Mediterranean diet that I choose to add to my own eating choices. The core principles of the diet center around eating fresh, plant-based food and healthy fats. These types of food make me feel and perform my best, so whatever you choose to call it, this is what I base my diet around all the time. I’m all for more fresh veggies and avocados in my life, but my main interest in the Mediterranean way of eating stemmed from my obsession with gyros. When I was about 10, my family went to this upscale, ritzy Greek restaurant. Being 10, I was upset we weren’t at a “normal restaurant,” aka a place with a recognizable theme song, and I protested to even looking at the menu. My dad ordered me a gyro and after one bite I wanted to be submerged in the Tzatziki sauce forever. I’ve now become an amateur gyro taste tester experiencing them all the way from restaurants in Europe to food trucks in the US. I’ve recreated it in my kitchen for a version that is light, quick, and casual with all the flare and flavors of the original.

Chicken Gyro

Yield: 4 servings Ingredients
  • 4 small chicken breasts, cooked
  • 1 cup plain Greek yogurt
  • 1 Tbsp lemon juice
  • 1 Tbsp fresh dill
  • 1 clove garlic, minced
  • ½ cucumber, finely diced or shredded
  • Salt & pepper
  • 2 tomatoes, diced
  • ¼ red onion, diced
  • Feta cheese
  • 4 whole wheat pita bread
Instructions
  1. If chicken is not cooked, cook it on the grill or in the oven until internal temperature reaches 165 degrees Fahrenheit. Season as desired, I use a lemon pepper seasoning. Rotisserie chicken is a great time saver for this recipe.
  2. To make Tzatziki sauce, combine Greek yogurt, lemon juice, dill, garlic, cucumber, salt, and pepper and stir until well-mixed.
  3. Assemble gyros by adding a sliced chicken breast, red onion, tomato, and a large dollop Tzatziki sauce onto a pita. Sprinkle with feta cheese, if desired.
