Apple Butterscotch Oat Bars
Yield: 10 Bars Ingredients- 1 cup oats
- 1 cup almonds or cashews
- ¼ cup coconut flakes
- ½ cup almond butter
- 2 scoops vanilla or unflavored protein powder
- 1 tsp vanilla extract
- ¼ cup maple syrup
- ¼ cup plain Greek yogurt
- ½ tsp cinnamon
- ½ tsp salt
- ½ cup butterscotch chips
- ½ cup dried apple, chopped
- Add oats, nuts, protein powder, cinnamon, and salt to a food processor and pulse until crumbly.
- Add almond butter, vanilla, maple syrup, and yogurt and pulse until mixed.
- Fold in butterscotch, coconut, and dried apples.
- Line a brownie pan with parchment paper for thinner bars or a bread loaf pan for thicker bars and press the mixture firmly in.
- Put the pan in the fridge for 30 minutes before cutting and eating.
