BBQ Chicken Freezer Burritos
Yield: 5 Burritos Ingredients- 5 small (or 2-3 large) chicken breasts, cooked and shredded
- ½ cup bbq sauce
- 1 cup Mexican blend shredded cheese
- 1 can diced green chilies
- 1 can diced tomatoes
- 1 can corn, drained
- 1 bell pepper, sliced
- 5 whole wheat tortillas
- Cook and shred the chicken breasts.
- In a bowl, mix together shredded chicken and bbq sauce.
- In a small saucepan, add a teaspoon on olive oil over medium heat. Then, add sliced bell peppers and cook until slightly soft.
- In a separate small bowl, add tomatoes, corn, and diced green chilies.
- Assemble burritos by adding chicken, peppers, corn salsa, and cheese into the tortilla.
- Wrap the burrito in foil and freeze.
- To reheat: bake the burritos in foil for 20-25 minutes at 350℉ or remove foil and microwave until heated through.
