I grew up with a basement full of freeze-dried food and 5-gallon jugs of water. My dad is and always has been Captain Prepared and if there were ever to be an instance where we were trapped in our basement my family would not go hungry, that is for sure. Like most adults, I have taken bits of my parents' crazy habits and made them into my own. My version of freeze-dried food and 5-gallon buckets have morphed into a fully stocked freezer of prepared breakfast, lunch, dinner, and dessert. As opposed to preparing for the end of the world, my freezer food is simply preparing for a starved Gloria. Which may be one and the same, I don’t know. If there is one common mistake I see as a dietitian, it is lack of preparation. Athletes plan out their workouts, lay out their gear, pack a gym bag, but forget to consider what they will eat when they are home and hungry. Having an army of desirable, nutritious food on hand is a huge piece of the puzzle to living a well-fueled lifestyle. These Bbq chicken burritos are a perfect way to start building your troops. They are incredibly easy to assemble and reheat beautifully. Feel free to customize your burritos by adding beans, different vegetables, or additional toppings.

BBQ Chicken Freezer Burritos

Yield: 5 Burritos Ingredients
  • 5 small (or 2-3 large) chicken breasts, cooked and shredded
  • ½ cup bbq sauce
  • 1 cup Mexican blend shredded cheese
  • 1 can diced green chilies
  • 1 can diced tomatoes
  • 1 can corn, drained
  • 1 bell pepper, sliced
  • 5 whole wheat tortillas
Instructions
  1. Cook and shred the chicken breasts.
  2. In a bowl, mix together shredded chicken and bbq sauce.
  3. In a small saucepan, add a teaspoon on olive oil over medium heat. Then, add sliced bell peppers and cook until slightly soft.
  4. In a separate small bowl, add tomatoes, corn, and diced green chilies.
  5. Assemble burritos by adding chicken, peppers, corn salsa, and cheese into the tortilla.
  6. Wrap the burrito in foil and freeze.
  7. To reheat: bake the burritos in foil for 20-25 minutes at 350℉ or remove foil and microwave until heated through.
