Chicken Gyro
Yield: 4 servings Ingredients- 4 small chicken breasts, cooked
- 1 cup plain Greek yogurt
- 1 Tbsp lemon juice
- 1 Tbsp fresh dill
- 1 clove garlic, minced
- ½ cucumber, finely diced or shredded
- Salt & pepper
- 2 tomatoes, diced
- ¼ red onion, diced
- Feta cheese
- 4 whole wheat pita bread
- If chicken is not cooked, cook it on the grill or in the oven until internal temperature reaches 165 degrees Fahrenheit. Season as desired, I use a lemon pepper seasoning. Rotisserie chicken is a great time saver for this recipe.
- To make Tzatziki sauce, combine Greek yogurt, lemon juice, dill, garlic, cucumber, salt, and pepper and stir until well-mixed.
- Assemble gyros by adding a sliced chicken breast, red onion, tomato, and a large dollop Tzatziki sauce onto a pita. Sprinkle with feta cheese, if desired.
