Greek Bruschetta
Yield: 24 slices Ingredients- 2 whole-grain baguettes or country bread
- ¼ cup olive oil
- ¼ cup red onion, finely chopped
- 1 large cucumber, diced
- 1 cup tomato, diced
- ½ cup feta cheese
- 1 cup hummus
- Red wine vinegar
- 1 Tbsp fresh chopped parsley
- Lemon zest (optional)
- Slice the bread with a serrated knife.
- Brush both sides of the slices with olive oil.
- Toast on a baking sheet in the oven at 400℉ for 10-15 minutes or until crispy.
- Add red onion, cucumber, tomato, feta, a drizzle of olive oil and red wine vinegar into a bowl and toss until combined. Season with salt and pepper.
- To assemble, spread a generous amount of hummus on each bread slice and a spoonful of the vegetable mixture. Garnish with chopped parsley and lemon zest if desired.
